Wild marjoram, or oregano, is often confused with its relative, sweet marjoram. Both plants are important culinary herbs but for medicinal use, wild marjoram is preferred. In culinary terms, wild marjoram is more usually referred to as oregano. Italian oregano is a peppery, pungent-tasting herb and used dried, gives pizza and spaghetti sauces their characteristic flavor. In Mediterranean cookery, oregano gives a fine, strong flavor to bean casseroles, stews, and sauces based on tomato or aubergines.
